ERK SOUS (LICORICE ROOT)

Not recommended for: 

Women who are pregnant/lactating 

Individuals with high blood pressure

Due to its unique properties, it is recommended to not consume more than 2 cups of Erk Sous per day.

Easy to prepare and can be stored in the fridge for up to 3 days! Requires overnight soaking. 

Always serve chilled

Yields: 8 Cups 

INGREDIENTS

1/2 Cup Erk Sous/Licorice Root dried and shredded 

2 tsp baking soda 

8.5 Cups Water 

DIRECTIONS

  1. In a bowl, take the licorice root and mix in the baking soda.

  2. Slowly add in 1/2 cup of water as you mix and knead the root with your hands

  3. Stop adding water when the mixture has the consistency of wet soil and can clump together

  4. Cover the bowl and leave outside overnight

  5. Transfer the mixture to a cheesecloth and seal it with twine/band

  6. Place the licorice root wrapped in the cheesecloth in a pitcher and add 8 cups of water

  7. Leave to steep for 4-6 hours in the fridge

Madam’s Tricks: 

  • Using a blender bottle take the erk sous with a few cubes of ice and shake well, pour out into a glass and you’ll have beautiful flawless foam

  • This is definitely a unique and delicious flavor profile, and until I created this recipe I would barely tolerate more than a sip or two. Now I get to wholeheartedly enjoy the glass I make! If the flavor is too concentrated, add water to dilute!

  • Best served traditionally, take a glass, and as you're pouring the drink, slowly raise the pitcher higher and higher to create a natural foamy layer.
