Sesame Roasted Brussel Sprouts

When you take a chance on Brussel sprouts, have this recipe up your sleeve! This little vegetable has its own deep smokiness that gets unleashed with the right partners.

Ingredients:

1lb Medium Size Brussel Sprouts cut in halves

3 TBS Coconut Amino (OR Fish Sauce)

1 TBS Soy Sauce

1/4 Cup chopped Cilantro

1 TBS freshly squeezed lemon juice

1 tsp sesame oil

1 tsp sesame seeds

Salt and pepper to taste

OPTIONAL:

1 garlic clove finely diced

2 tsp Rice Wine Vinegar

1 tsp sugar (regular or monk fruit)- the sugar helps cut through the acidity, to taste!!

Directions:

  1. Preheat the oven to 375°F. Arrange the Brussel sprouts on a baking sheet face up and place the sheet in the oven. Roast for 20-30 minutes, at the halfway mark check for color on the face-up side and flip them over. The timing may take longer depending on your oven, look for a “roasted finish”, allowing the leaves to crisp up.

  2. In a small skillet, toast the sesame seeds on medium heat tossing every so often until the seeds are golden and aromatic.

  3. In a small bowl or jar combine the coconut amino, soy sauce, cilantro, lemon juice, toasted sesame seeds and sesame oil (option to add the sugar, diced garlic clove, and rice wine vinegar) mixing/shaking well to combine.

  4. In a bowl, combine the roasted Brussel sprouts with the dressing and toss until well coated.

  5. Serve and Enjoy!
