Fennel & Grapefruit Salad

INGREDIENTS:

1 Large Grapefruit 

1 Medium Fennel Bulb 

1 tsp honey 

1 tsp Mustard 

1 TBS Fresh Lemon Juice 

1 TBS Fresh Grapefruit Juice 

1/4 tsp salt 

1/8 tsp ground pepper 

1 tsp fennel seeds 

1 TBS Extra Virgin Olive Oil 

OPTIONAL 1 medium apple (crispy apples work best for this salad, honeycrisp, fuji or green)

DIRECTIONS:

1). Tricky part first: segment the grapefruit and remove any membranes (Pro Tip, cut the grapefruit and remove the segments over a bowl to reserve the grapefruit juice, and remember you can always prep the grapefruit one day before and store it in the fridge!) 

1a). Optional apple add on: cut the apple into quarters and remove the core. Slice the apple into strips (approximately the size of the fennel)

2). Slice the fennel, reserving the fronds for salad topping, into thin strips (similar to an onion).

3). Combine Olive Oil, honey, mustard, lemon juice, grapefruit juice, salt, ground pepper, and fennel seeds in the bowl and whisk until well combined. 

4). Toss Grapefruit and Fennel (and optional apple) together into dressing and mix until well coated. 

5). Serve with fennel fronds decorated on top of salad.
